Do you know the muffin man?

I wish I did then he could provide me daily with fresh muffins..

But since I don't , and since I do like them fresh I make my own, using simple but delicious recipes, that are easy to make and fast.

Most people rarely make their own muffins, because they are short on time . Just the thought of making muffins seems like a daunting chore that will take forever..But muffins are really easy and fast, especially because even though they seem like a bread, they do not require the addition of yeast, which would require kneading and rising.

The batter can be quickly mixed up, and baked for a short amount of time. Well worth the effort of knowing the muffin is fresh, wholesome and full of goodness.

If your short on time but would like to put muffins on your breakfast table , your muffins can be put together in stages. The night before , just mix the dry ingredients, and then the wet ingredients, store them separately in the refrigerator. The next morning, combine according to recipe directions and bake.

Muffins can be a sweet treat, such as, Cranberry Maple Muffins, (recipe included) or a savory recipe can be used such as Savory Mushroom And Bacon Muffins (recipe coming soon)

Ingredients For Cranberry Maple Muffins

  • 1 3/4 Cups All Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1 Egg, beaten
  • 1/2 Cup Maple Syrup
  • 1/2 Cup Milk
  • 1/4 Cup Butter, melted
  • 1/2 Cup Dried Cranberries
  • 1/2 Cup Confectioner's Sugar
  • 1/4 tsp Vanilla Extract
  • 2 - 3 tsp. Milk

Instructions For Cranberry Maple Muffins

  1. Preheat oven to 400 degrees. Line a standard 12 cup muffin tin with paper cupcake liners.
  2. In a medium bowl, sift together the flour, baking powder, baking soda and salt. Make a well in the center.
  3. In a small bowl, stir together the egg, maple syrup, milk, and butter. Add all at once to the flour mixture and stir until just moistened ( the batter will be lumpy). Fold in the cranberries.
  4. Spoon batter into prepared muffin cups, filling them 2/3 full. Bake until golden brown, about 15 minutes. Cool in pan for 5 minutes, then move to a wire rack.
  5. For the icing: in a small bowl stir together the sifted confectioner's sugar, vanilla, and enough milk to make a smooth icing of consistency to drizzle. Drizzle over cooled muffins.

Maple Syrup

Maple syrup is a syrup that is usually made from the sap that is collected from sugar maple, red maple, or black maple trees, however it can and is also be made from other maple species.

In cold climates, starch is stored in the trunks and roots of these trees before the winter; the starch is then converted to sugar that rises in the sap in the spring.

The maple trees are then tapped by boring holes into their trunks and collecting the sap that is exuded.

The sap is then processed by heating it to evaporate much of the water, leaving the concentrated syrup.
